LINGUINE WITH LEMON SAUCE

This recipe is from the excellent Remarkable Recipes by Judy Ridgway


INGREDIENTS:

  • 330g linguine or spaghetti
  • Juice of 2 large organic lemons
  • 125ml of Suerta Alta Extra Virgin Olive Oil
  • 150g freshly grated parmesan or pecorino
  • Salt & freshly ground black pepper
  • Zest of 1 organic lemon
  • Fresh basil, chopped


METHOD

1. Cook the pasta in boiling water until al dente.

2. While the pasta is cooking, beat the lemon juice and Suerta Alta Extra Virgin Olive Oil  together to emulsify, then stir in the parmesan until creamy.

3. Season with salt and black pepper and add the lemon rind and basil.

4. Drain the pasta and return to pot, add the sauce and stir lightly.
