HOW TO STORE EXTRA VIRGIN OLIVE OIL
The main thing to remember is that HEAT, LIGHT and AIR are the enemies of Extra Virgin Olive Oil (EVOO) as it will go rancid when exposed to them.
Store in a cool dark cupboard – around 16 degrees. The worst place you can store olive oil is beside the cooker or on a windowsill.
Buy olive oil in dark bottles or tins. Avoid clear bottles.
Use your olive oil within a few months of opening.
However, if an olive oil is treated well, it can remain stable (with deteriorating flavour) for up to two years.
